Considered by many to be the best barbecue spot in Kansas City, this rustic joint is always hopping at lunch as CEO's and secretaries rub shoulders with cops and construction workers over deliciously tangy fare. DOWNTOWN. Blues, beer, and barbecue! What more could you ask for? BB's, a rather bare-bones place, was opened by blues lovers Lindsay and Jo Shannon, whose combined music collection numbers more than 5,000 blues recordings. Don't judge by appearance ­ the barbecue spot is a diner's delight. Pork ribs, battered fries, baked beans, jambalaya, and crawfish étouffé keep regulars begging for more, more, more. Great blues music completes the atmosphere. A real Kansas City treat.

DOWNTOWN. Despite seating just 18 people, this tiny BBQ joint has a massive following. It's no secret why ­ brisket sandwiches are renowned for their size and flavor, and the ribs, dry-rubbed before smoking, enjoy a strong reputation as well. Sides include heaping helpings of slaw and pasta salad ­ the absence of a deep fryer (and thus onion rings and fries) doesn't seem to bother anyone. Dessert is also limited to a few delicious choices, most notably thick fudge brownies. Show up before the noontime rush if possible.

MARTIN CITY ­ SOUTHSIDE. This carnivore's haven is popular with folks looking for a perfect slab of succulent barbecued beef ribs. Other specialties include lamb ribs, terrific onion rings, barbecued Strawberry Hill Polish sausage, and hickory-smoked fish and seafood. Expect a wait, but know that you'll be rewarded with an excellent meal.
